Creamy Garlic Asparagus Pasta
It's been awhile since I posted a pasta recipe on here! I love pasta, it is easily my favorite food! But, I don't always eat it! This recipe is one of my favs because the sauce is light and creamy, the asparagus is crunchy, and bow tie pasta is my favorite noodle! You can't go wrong! I think you'll like this one! Make it with me!
True story: I hate chicken in pasta. I don't like that I can't see it because it is covered in sauce, and I don't like the texture with the pasta. So weird, I know. My logic does not make sense. But if you aren't weird like me, you can add some grilled chicken to this recipe and I'm sure it would be delicious! When I made this recipe for my family, my little brother asked my why I didn't put chicken in it. If you were wondering that too, now you know why!
I like to develop recipes that leave room for you to get creative! I used bowtie noodles in this recipe because they are my favorite, and I think that they are the prettiest noodle. You could also use fettuccine noodles, whole wheat noodles, spaghetti squash noodles, whichever type of noodle you prefer!
Creamy Garlic Asparagus Pasta
Yields 6-8
1 pound farfalle pasta
1 pound fresh asparagus, chopped
4 tablespoons butter
2 garlic cloves
1/4 cup grated parmesan cheese
8 ounces cream cheese
1/4 cup milk
1 tablespoon parsley
Salt & Pepper to taste
In a large pot, begin by boiling water. Add the pasta and cook on high for 10 minutes. Chop the asparagus. In the last two minutes, add the asparagus to the boiling water and cook. Strain the water and set aside.
In a saucepan over medium low heat, add the butter and minced garlic. Next, add the cream cheese, parmesan cheese, and milk. When everything is melted and mixed, add in the parsley and season with salt and pepper to taste.
Add the cooked pasta and asparagus to the sauce and stir to coat. Serve hot.
