Next up, is the package of vegetable stir fry. This is so awesome! I found it at Smith's! It's got all kinds of different vegetables prepped, sliced and ready to go! Everything from kale, Brussels sprouts, broccoli, carrots, snap peas and more! You just have to dump the whole bag into a pan with some olive oil and heat it up! It even comes with a enak ginger sauce that you can add for an extra boost of flavor!
Lastly, for the chicken. There are so many ways to get your chicken. My personal favorite is the packaged rotisserie chicken sets from Costco. They are two whole rotisserie chicken's, chunked up, skinned, and fully cooked and ready to go! You can also cook up some frozen chicken in the Instant Pot, 20 minutes and you'll have a fully cooked breast. Learn how to use this method HERE. You could also use those precooked grilled chicken strips from Costco that you find in the refrigerator section. As a last resort, you can always use canned chicken! Some people hate it, I don't seem to mind it!

Prep Free Meal Prep
Yields 4 Meals
2 packages Trader Joes frozen Brown Rice
1 package Vegetable Stir Fry Kit
1 package precooked rotisserie chicken, or 3 cooked chicken breasts, or 3 cups grilled chicken strips
2 tablespoons olive oil
In a frying pan, add the olive oil. Add the package of vegetable stir fry and cook until vegetables are wilted. Add the ginger glaze that comes with the vegetables and set to the side.
For the rice, remove the package from the box. Puncture 3 wholes in the bag and microwave on high for 3 minutes. Remove from microwave and portion out into meal prep containers.
For the chicken, simply cut up whichever chicken you choose to use. Instant Pot Frozen Chicken, Costco rotisserie chicken, or the Costco grilled chicken strips.
Assemble each bowl. Rice, veggies, chicken, and refrigerate until ready to eat. When reheating, use half power and heat for 2-3 minutes.
