Almond Crusted Pork Loin
ALMOND CRUSTED PORK LOIN
Vegetable oil cooking spray
Almonds, Slivered and Blanched, 8 oz.
(6 oz)(1 1/4 cups, chopped)
2 medium garlic cloves, crushed
Salt & pepper to taste
2 egg whites
1 1/2 pounds boneless pork loin
SALSA:
2 medium tomatoes, diced (about 2 cups)
1/2 cup diced red onion
1 jalapeno pepper, seeded & chopped
1 tsp ground cumin
2 Tblsp lime juice
1/4 cup chopped fresh cilantro
Salt & pepper to taste
Preheat panggangan to 375 F. Line a roasting pan with foil & place a meat rack on the foil. Spray with cooking spray. Coarsely grind almonds in a food processor. Mix almonds, garlic & salt & pepper to taste in a bowl. Set aside.
Whip egg whites to form soft peaks. Remove fat from the pork. Roll the pork in the egg whites & then in the almond mixture. Roll once more in the egg whites & then again in the almond mixture. Place pork on the rack & press any rremaining almonds onto the pork.
Roast 1 hour or until a meat thermometer reaches 160 degrees F. Remove from panggangan & let rest 15 minutes. Slice & serve with tomato salsa.
Mix the salsa ingredients together. Add salt & pepper if needed.
Makes 4 servings with 2 cups salsa
