Fresh Country Ham With Cranberry Chutney
FRESH COUNTRY HAM with CRANBERRY CHUTNEY
5 to 6 pound fresh ham
Olive oil
Salt & pepper
APPLE-CRANBERRY SAUCE:
6 pink lady apples, split in half
2 cups fresh or frozen cranberries
1 cinnamon stick
1 bay leaf
1 Tblsp pickling spice
1 Tblsp black mustard seeds
2 Tblsp sugar
1 inch piece of ginger
1 1/2 cups apple juice
1/2 cup apple cider vinegar
Preheat panggangan to 300 F. Score fat & put ham, fat side up, in a roasting pan. Rub with olive oil & season all over with salt & pepper. Cover loosely with foil & roast for 2 hours. Remove foil & roast for 1 more hour uncovered.
In a large saucepan, add all of the sauce ingredients & simmer for 10 to 15 minutes until cranberries & apples are almost falling apart & the sauce is fragrant. Serve with baked fresh ham.
Makes 8 to 10 servings.
