Hard-Cooked Egg Gratin

2 Tblsp butter
3 Tblsp all-purpose flour
1 1/2 cups milk
1 pinch salt
1 pinch pepper
1 pinch nutmeg
1 1/4 cups shredded cheese, Gruyere, Cheddar or Swiss
6 hard boiled eggs
4 green onions
1 1/4 cups frozen peas
1/2 cup fresh bread crumbs
Preparation:
In saucepan, melt butter over medium heat; stir in flour & cook, stirring, for 2 minutes, without browning. Gradually whisk in milk; add salt, pepper & nutmeg. Bring to boil; reduce heat & simmer for 2 minutes. Remove from heat; stir in 1 cup of the cheese until melted.
Cut eggs in half lengthwise; chop onions into pea-size pieces. Arrange eggs, cut side up, in greased 6-cup (1.5 L) gratin or casserole dish; sprinkle with peas & onions. Pour sauce over top; sprinkle with remaining cheese & bread crumbs. Bake in 450°F oven until bubbly & slightly browned, 25 to 30 minutes.
