Beef & Edamame Stir-Fry







Do you ever wonder why the beef at Asian restaurants always tastes so flavorful and tender? Then when you go to make it at home and it just isn't the same? The secret is in the way that they prepare the meat before they cook it. A few extra steps will take your Beef & Edamame Stir-Fry to the next level! It's a better than take out kind of dinner! Make it with me!






A few extra steps will make your stir-fry meat tender and delicious! All it takes is a little prep work before you cook it! Simply rub some baking soda over the raw meat on both sides. Then, slice the steak with the grain into thin pieces. Place the slices in a mixing bowl. Next, mix in one egg and a little bit of sesame oil to the meat, cover, and let it sit for 20 minutes. This simple step in the prep will make the steak so tender. The baking soda will help to tenderize, as well as lock in the moisture of each piece.









In this recipe, I use Edamame because it is what I had on hand! You can easily substitute broccoli, zucchini, green beans, or green peppers as the vegetable base! I love the texture of the Edamame and the bite that it gives this dish! If you are looking for a new flavorful stir-fry recipe to try out, this one is a great one!

Beef & Edamame Stir-Fry
Yields 4-6 servings

1 1/2 pound sirloin steak
1 tablespoon baking soda
1 egg
1 teaspoon sesame oil
1 tablespoon vegetable oil
1/2 medium purple onion, sliced
3 cloves garlic
1 cup chopped mushrooms
1 cup diced peppers, any color
1 cup shredded carrots
2 teaspoons ginger
1 cup edamame, shelled
1/2 cup peanuts, crushed or whole
2 tablespoons teriyaki sauce
1 tablespoon soy sauce
1 tablespoon vegetable oil
2 green onions, diced


Wash the sirloin steak in cold water. Place on cutting board.

Rub 1/2 tablespoon of baking soda on each side of the sirloin. Then, with the grain, thinly slice strips of the sirloin and place in a mixing bowl. When finished slicing, mix in egg and sesame oil with hands. Cover and let rest for 20 minutes.

In a large sauce pan over medium high heat, add the vegetable oil, purple onion and garlic. Saute for 2 minutes.

Next, add in the marinated steak and cook until browned, about 4-5 minutes.

Once browned, add in the mushrooms, peppers, carrots, ginger, and edamame. Reduce heat to low, and cover. Allow to simmer for 2 minutes.

In a small bowl, whisk together teriyaki sauce, soy sauce, and vegetable oil. Add to sauce pan. Stir in peanuts and green onions and serve. Best served over rice or noodles.
