Watermelon Cake
Hey friends! Happy Memorial Day Weekend to you all! Today I am sharing with you a fun, new recipe to add to your barbecue! This Watermelon Cake is not what it appears to be! It is actually made entirely out of fruit! The center is three tiers of watermelon slices, held together by stabilized whipping cream, and topped with additional fruit topping! It's healthy, flavorful, and delicious! Your friends and family will love this fun way to shake up a traditional fruit platter! Make it with me!
Watermelon Cake
1 medium size, round watermelon
2 cups heavy cream
1 cup powdered sugar
1 1/2 teaspoons vanilla
1 teaspoon unfavored knox gelatin mix
2 tablespoons water
additional berries for topping
Start by preparing the stabilized whipping cream. In a small bowl, add the water and unflavored gelatin mix. All to set up for 5 minutes, this will become solid and squishy. While you are waiting, add heavy cream, powdered sugar, and vanilla to a stand mixer and set it to high. After 5 minutes of mixing, grab the gelatin mixture and microwave it for 10 seconds to bring it back to a liquid. Add slowly to the whipping cream. Continue mixing until stiff peaks form. Refrigerate until ready to use.
Prepare the watermelon layers by first removing the two ends of the watermelon with a knife. Next, peel the outside of the watermelon peel off. Then, slice the remaining body of watermelon into thirds.
Begin assembly. Place one layer of watermelon down, and spread a thick layer of whipping cream over the top. Repeat with all three layers. Frost the outsides of the watermelon until completely covered. Finish topping with additional berries. Serve.
