Meal Prep Burrito Bowls

I used black beans in this recipe! You can use whatever beans you like the best, black beans are my favorite! I also use mozzarella cheese, but again, you can use any flavor of cheese you like! That is what is awesome about meal prep bowls, you can make them up to your liking.
Meal Prep Burrito Bowls
Yields 4 bowls
2 cups brown rice
2 tablespoons cilantro
4 cups shredded chicken
1 can black beans
1 cup mozzarella
Optional Toppings:
Sour Cream
Salsa
Guacamole
Place 1/2 cup cooked brown cilantro lime rice in each bowl. Top with chicken (1 cup), beans (1/4 cup) , and cheese (1/4 cup) and store in the fridge until ready to eat. After heating up the bowls, top with any of the optional toppings. Enjoy!
I cook my rice in the Instant Pot! 2 cups brown rice, 1 cup water, 1 squeezed lime, 2 tablespoons chopped cilantro. 24 minutes on manual, then quick release!
I also cook my shredded chicken in the Instant Pot! I put 3-4 frozen chicken breasts in the pot, with 1 cup of water, 1/2 cup of salsa, and a tablespoon of taco seasoning. 20 minutes on manual, then quick release and shred!
