Pasta With Pumpkin Sauce
PASTA with PUMPKIN SAUCE
1 pound radiatore pasta
1 1/2 cups broccoli florets
8 oz turkey breakfast sausage, removed from casing
1 tsp pumpkin pie spice
1 1/4 cups half & half
1 cup canned cooked pumpkin
2 Tblsp brown sugar
1/4 tsp salt
Cook pasta as package directs, adding broccoli 3 minutes before pasta is al dentè.
Meanwhile, cook sausage in a large nonstick skillet over medium-high heat, breaking up with spoon, until cooked through, about 6 minutes. Drain fat.
Stir in pumpkin pie spice; cook 1 minute. Stir in half & half, pumpkin, sugar &vsalt. Heat mixture to boiling & cook 1 minute longer.
Drain pasta & broccoli. Return to pot. Add sauce & toss to coat.
Makes 6 servings.
