How To Make Bacon Foam

1 cup chicken stock
2 strips smoked bacon
1 cup heavy cream
1 Tblsp butter
 
In a small saucepot bring chicken stock & bacon to a boil.


Continue to boil for 1 to 1-1/2 minutes.

Strain into another saucepot & add cream.

Bring to a boil for 3 minutes. Remove from heat & whisk in butter.

Season & keep warm.
