Jamaican Banana Bread
JAMAICAN BANANA BREAD
Cooking spray
2 tablespoons margarine, softened
2 Tblsp cream cheese, softened
1 cup sugar
1 large egg
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp baking soda
1/8 tsp salt
1 cup ripe banana, mashed
1/2 cup skim milk
2 Tblsp dark rum or 1/4 tsp imitation rum extract
1/2 tsp lime zest
2 tsp lime juice
1 tsp vanilla extract
1/4 cup pecans, chopped & toasted
1/4 cup flaked sweetened coconut
1/4 cup packed brown sugar
Topping:
2 tsp margarine
2 tsp lime juice
2 tsp dark rum or 1/8 tsp imitation rum extract
2 Tblsp pecans, chopped & toasted
2 Tblsp flaked sweetened coconut
Preheat panggangan to 375 degrees F. Lightly grease two 8x4 inch loaf pans.
Beat together 2 Tblsp of softened margarine & cream cheese in a large bowl until fluffy. Slowly beat in sugar until well incorporated. Add the egg; mix well.
Sift together the flour, baking powder, baking soda, & salt in a separate bowl. In a different bowl, mix together the bananas, milk, 2 Tblsp rum, lime zest, lime juice, & vanilla extract; stir well.
Pour 1/3 of the flour mixture into the butter & mix well. Mix in 1/2 of the mashed bananas. Continue with another 1/3 of the flour, followed by the remaining banana mixture, & finally the remaining flour. Fold in 1/4 cup pecans & 1/4 cup coconut flakes.
Pour the mixture into the loaf pans, & bake in the preheated panggangan until a toothpick inserted into the center comes out clean (about one hour). When finished, cool for 10 minutes in the pan, remove, & finish cooling on a wire rack.
After taking the banana bread out of the oven, prepare the topping by stirring together the brown sugar, remaining butter, lime juice, & 2 tsp of rum in a small saucepan over medium-high heat.
Bring to a simmer stirring constantly; cook until the sugar has dissolved & the mixture is smooth, about one minute. Remove from heat; stir in 2 Tblsp pecans with 2 Tblsp coconut.
Spoon topping over the loaves while they are still warm. When completely cooled, the glaze will harden just like a glazed donut.
Makes 2 loaves.
