Mint Chocolate Brownie Cookies
Mint and chocolate are a match made in heaven! I love the combination in baking! I don't love the combination in ice cream, let that be known! Haha! These Mint Chocolate Brownie Cookies are seriously so good! They are easy too! I love taking a box mix, stepping it up a notch, enhancing it with a delicious frosting, and making it into a homemade delight! That's right, these brownie cookies start from a box mix! It doesn't get any easy than that! And the bright mint color makes this recipe a perfect one to share on St Patrick's Day! Make it with me!
These brownie cookies are delicious, chewy, and soft! Then, topped with a enak Whipped Mint Buttercream Frosting and a little chocolate drizzle, you seriously cannot go wrong! These are a new favorite dessert at my house and I think they will quickly become your favorite too!
The Buttercream in this recipe is super easy to make! If you have a stand mixer or hand mixer, I suggest using it! I throw everything into my Kitchenaid, turn in on low until everything starts incorporating, then I turn that baby up to high and let it work its magic! When you beat a buttercream like this on high, it really makes it lite and fluffy! It whips out all of the air bubbles, leaving you with a creamy, light frosting! And because it is a buttercream, you know that it is going to taste amazing!
Mint Chocolate Brownie Cookies
Yields 12 Large Cookies
or 15 Smaller Cookies
1 box brownie mix (18.25 ounce dry mix)
2 eggs
1/4 cup canola oil
1/4 cup flour
1 cup chocolate chips
Preheat panggangan to 375. Mix all the ingredients in an electric mixer until smooth. Scoop out cookies onto a prepared cookie sheet. Bake for 9-10 minutes. Allow to cool completely before frosting.
Whipped Mint Buttercream Frosting
1 cup butter, room tempterate
4 cups powdered sugar
1/4 cup milk
1 teaspoon peppermint extract
2-3 drops of green food coloring
In an electric mixer, add the butter and beat it until creamy. Next, add four cups of powdered sugar, milk, and peppermint extract, and beat until combine. Set the mixer to high and let it whip the frosting for 2 minutes. Add the green food coloring and fold it in until you reach your desired coloring.
Chocolate Drizzle
1 cup milk chocolate chips
1 teaspoon coconut oil or canola oil
In a microwave in 30 second intervals, melt down the chocolate and oil, stirring in between. Dump into a sandwich size ziploc baggie, cut off the corner, and drizzle over the frosted cookies.
