Basic Buttermilk Sauce
1 cup cold buttermilk
1 Tblsp cornstarch
2 tsps shoyu (soy sauce)
For a medium sauce, mix ingredients & bring to a boil in a heavy skillet. Use a spiral whisk or a fork & keep stirring vigorously as you bring the sauce to a boil. Let it simmer gently to thicken. It will curdle, but don't panic; as you stir, it will smooth out & come back together.
This quietly, tangy sauce can stand on it's own with anything interesting or flavorful.
